Easy One-Pot Paleo Chicken Dinner

I'm a pretty huge fan of one-pot dinners. Less fuss, fewer dishes, more time to enjoy hanging out with Rob after work. I love that I can have my protein and vegetables in one pan and cook everything together, then wash it quickly and have a clean kitchen. This recipe is super simple, but it's one that we have at least once a week.

Ingredients: 

  • Half of an onion, chopped
  • 2 cloves of garlic, crushed or chopped
  • 2 tablespoons ghee
  • 2 large bone-in, skin-on chicken breasts (could substitute thighs)
  • 1 medium head of broccoli florets
  • 1/2 cup of cherry tomatoes
  • salt and pepper, to taste

Instructions: 

  1. Preheat your oven to 350 degrees.
  2. In an oven-safe pan, sauté chopped onion and garlic in ghee over medium heat.
  3. Season chicken with salt and pepper before adding it to the pan and allowing it to brown well on one side, about 5 minutes. Turn the chicken over and add broccoli florets and cherry tomatoes.
  4. Move the pan to the oven and bake for 20-30 minutes, or until the chicken is cooked through.

Some Things I've Been Meaning to Say

I guess I was 26 years old when my parents split up; or maybe I was 25. When I say it that way, it makes it sound like it happened so long ago, even though it was just at some point in the past twelve to twenty-four months. Either way, it happened slowly and then all at once, like most things in life.

The past year or two have been dizzying with changes in my family, and I haven't told you guys about it until now, which has made me feel a bit inauthentic. Not because I feel like I always owe the Internet an explanation of what's going on in my life, but because there are so many things I've wanted to say--to express--and I haven't felt comfortable doing so until now.

Rob and I went to the lake this weekend and so many different feelings struck me from strange angles: happiness, nostalgia, anger, sadness. The morning air was brisk and billowy fog rolled over the surface of the cold water as it always does this time of year, and I sipped my coffee and thought about how all of this used to feel; marveling in the fact that at times, it still feels the same. It's a bouquet of emotions--some with luscious petals, fragrant and full of hope; others dried up, the blossoms falling apart one at a time. 

I'm an adult. I don't need my parents to be together and to be really frank, I also don't want them to be together. But none of this was easy, the way I thought it might be a year or two ago when I thought well, we aren't kids any more so what's the difference? You grow up and you realize that your parents are just people like you, and you want them to be happy. First I felt lost. Then I was mad. Now I'm okay.

The weirdest thing was the very ironic pride I felt whenever someone would mention (usually in a Facebook post with old wedding photos) the strength of their parents' marriage. It's always the same: Happy anniversary to my wonderful parents, who are celebrating [insert number here] years of marriage! Thank you for showing me and [insert sibling or spouse's name here] what a successful marriage looks like. 

At first I took this really personally, like Rob and I were going to miss out on something because we didn't have their positive influence in our lives. But that's just ridiculous. My parents have still taught me more about marriage than they could ever know, and for that I am thankful. Because whether it's cute and heartwarming or really incredibly sad, you can learn a lot from the people in your life, whether they've decided to stay married or not.

That's where I am now--letting things be what they are, and trying to make the most out of it. And no longer hiding this thing that's been on my heart for quite some time.

I'm back today with the last of our La Crema Farm-to-Table at Home series! I hope you've enjoyed it these past few months. I know I won't be forgetting our incredible trip to California any time soon.

We stayed at an amazing loft in downtown Healdsburg, and while we did go out quite a bit, we also did a ton of cooking--and we started with a gorgeous but simple one-pot chicken and mushroom risotto that I'm still thinking about to this day. We set a beautiful table that took no time at all and enjoyed such a great meal together. Today I'll be sharing some tips with you for setting an elegant table perfect for everyday life and dining.

So without further ado, here are some tips for setting an elegant table everyday--no matter the occasion (or not!):

  • Go for white dishes, but add texture.
  • Layer plates and bowls on top of each other at each setting to add depth and contrast. (Feel free to add color or patterns if that's more your style!)
  • Include some gold accents, like a charger. 
  • Don't be afraid to mix metals--gold flatware is super pretty but sometimes can be hard to find. Feel free to combine your everyday silverware with gold chargers and details, like the fun stemless wine glasses we used all week.
  • Don't forget the flowers! We love silk ones because they last forever and you can do so much with them. We also incorporated some fresh herb centerpieces that work extra hard as decoration on the table and flavor in the kitchen.
  • Have fun with it--experiment with your own personal style and remember that you don't need a special occasion to set a beautiful table. Weeknights with family and/or friends are special enough.

And no meal (or table) is complete without a few glasses of La Crema wines! We paired our risotto with both red and white--the Sonoma Coast Chardonnay is a favorite, but you also can't beat the richness of their Sonoma Coast Pinot Noir. The Monterey Chardonnay is another classic--you might as well include all three, just to be safe! So many dishes pair well with either red or white, so it's always fun to do a little of both.
