Recipe: Mini Eggplant Pizzas

I almost never buy eggplant, but the other day I picked up some pizza sauce and too much pepperoni, so I thought I'd slice one up and try to use it as the crust for some mini Paleo pizzas. It was easy and quick and really quite delicious! Here's how you do it:

Ingredients: 

  • One medium eggplant
  • Pizza sauce (make sure there's no sugar or canola oil in it if you're trying to go Paleo)
  • Pepperoni (mini ones would be better)
  • Parmesan cheese (optional)
  • Several tablespoons of extra virgin olive oil
  1. Preheat your oven to 350 degrees.
  2. Wash the eggplant and then slice it into rounds (about 1/4 inch in thickness). Place them on a baking sheet and brush the side facing up with olive oil. Bake for 10 minutes, flip them, brush that side, and bake for another 10 minutes.
  3. Spoon pizza sauce onto each eggplant round, then sprinkle Parmesan cheese (or skip it), then layer pepperoni on top. If you didn't buy mini pepperoni (like me) then you could use an apple corer to turn regular slices into a few mini ones.
  4. Top with a little more Parmesan and bake for about five minutes, or until the cheese starts to melt a little. Serve hot and enjoy!

Paleo Sausage and Sweet Potato Hash

A few weeks ago, my friend Jamie and I went to brunch at a sweet little place in Plaza Midwood called Zada Jane's, where I got an awesome dish called the Booker T.S. East Side Hasher, which was sweet potato hash browns underneath a sausage and egg frittata and topped with cheddar cheese. It was so good that I decided to make it a little Paleo-er at home over the weekend.

Ingredients: 

  • About a cup of chopped sweet potatoes
  • Two tablespoons of ghee
  • One to two cloves of garlic, chopped
  • 1/4 cup chopped onions
  • 1/4 cup chopped green peppers
  • Salt and pepper, to taste
  • Four eggs
  • One package of your favorite breakfast sausage
  • Chopped green onions for garnish

Instructions: 

  1. In a large pan, cook the sausage. Once both sides are thoroughly browned, remove from heat and set aside.
  2. Saute garlic, onions, and green peppers in the ghee. Cook sweet potatoes according to this recipe. Once they're finished, remove from heat and set aside with the sausage.
  3. Cook the eggs--we had them scrambled but they would be really great over medium or even poached. It's up to you!
  4. To serve, layer sweet potatos, eggs, and (chopped) sausage. Top with green onions and enjoy!

Strawberry Lemonade Paleo Gummy Snacks

Gelatin! It's a thing I don't really think about. I make bone broth every other week or so but it's not really a staple in my diet. But after reading about the wonders that gelatin can do for your skin, hair, nails, digestion, and overall health, I really want to make more of an effort to eat it regularly. So this is my attempt at that: fruity little gummy snacks. You could do any flavor you fancy, but I started with strawberry and lemon. (I have my sights set on pineapple mango next!)

Ingredients: 

  • 1/4 cup gelatin (preferably grass-fed--this one is a good choice)
  • 1 cup of frozen strawberries (or any fruit you'd like to use)
  • Juice from 2-3 lemons, or about 3/4 of a cup (again, you could use a different fruit juice)
  • About a tablespoon of honey (more or less depending on your taste preferences)

Instructions: 

  1. Combine fruit and juice in a blender until it is thoroughly blended.
  2. Pour into a saucepan over medium-low heat and add the gelatin and honey. Heat and stir until the mixture thins out a bit and is mixed well.
  3. Pour the mixture into a small dish or, if you have them, little candy molds. Store in the refrigerator for at least an hour to firm up. If you poured it into a dish, cut into squares and enjoy!
