Recipe: Lemony Cucumber Salad with Tuna and Peas

I've been thinking about this salad for a while now and I'm so glad I finally made it--it's mostly cucumbers and tuna but I threw some lettuce and peas in there as well. The whole thing is dressed in a really simple lemon vinaigrette and tossed together with the secret ingredient...chopped mint! There's just something so beautiful about lemon and cucumber and mint together, and I especially love it with tuna. 

Ingredients:

  • 1 large cucumber, sliced thinly or spiralized into ribbons
  • 1/4 cup of peas
  • About 1/2 cup of lettuce, chopped
  • 1 5-ounce can of Wild Selections Tuna in Water, drained
  • 2-3 tablespoons of fresh mint leaves, chopped
  • 1/4 cup lemon juice (or the juice of 1 lemon)
  • 1/4 cup olive oil
  • 1 clove of garlic, crushed
  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, combine cucumber, peas, and lettuce together. In a smaller bowl, whisk lemon juice, garlic, and olive oil together. Season with salt and pepper. Pour half of the dressing onto the salad and toss well to combine.
  2. Just before serving, add the tuna, mint leaves, and a bit more dressing. Toss gently and serve immediately.

Some Things You May Not Know About Me v.9

I pretty much only listen to music on Spotify now but every now and again if I'm in a super specific mood I have to listen to one of two Pandora stations I've had since college. They're perfectly curated and remind me of who I used to be when I'm missing her (or trying to find her again).

I have very weird toes--my pinky toe is tiny and kind of fits into a groove that's on the side of the one next to it. When I wear sandals my pinky toe is always hidden and Rob always goes "Oh no! What happened to your toe?" like it just disappeared, never to return again.

I love pork rinds. A lot. I get the spicy ones and dip them in Ranch dressing. It's gross and awesome.

I cry every time I listen to "Dear Theodosia" on the Hamilton soundtrack. Also right when they announce George Washington in "Right Hand Man." I can't explain it.

I get incredibly irritated whenever I see sponsored content on blogs or Instagram feeds that isn't properly disclosed. It's one of my biggest pet peeves and it makes me a little crazy.

At least once a week I wake up early but then set my alarm for another hour so I can snuggle Rob and Ender.

Happy Friday! I feel like every week just gets busier and busier (that's a whole other post that I'm starting to put together to fill you guys in on some of the stuff that's been going on behind the scenes with me), and this week was no different--I'm so excited that my second book is coming out so soon, and we've been working on a few really fun things to help celebrate its launch on May 9th (although the e-book version will be available on April 25!).

That's all for now! This weekend we're staying put and getting ready for our trip to Charlotte next week--we have some errands to run, some laundry to fold, and a dog training session to go to on Saturday. Then on Sunday I'm having lunch and doing a little shopping with some girlfriends, and hopefully cleaning the house a bit--I love coming home to a clean house after a trip!
