Another Autumn

Last week I stood in my back yard and noticed that we've reached the time of year for that subtle shift to set in--where summer starts to nod to fall as it dozes off around the edges of the day. 

Sure, it's still 90 degrees in the late afternoon and you have to peel yourself out of your car, but in the morning the air is refreshing and you begin to think about taking your coffee hot again. In the evening, when the sun starts to go down, Ender and I play fetch in the yard and the grass is cool beneath my bare feet. 

Rob is currently home for a twelve day stay but last week before he had returned from California I found myself reminded of a time before Ender, before we had Charlotte friends, when the thought of moving to the Bay Area was just a vague dream we sometimes talked about. We were so focused on getting settled in North Carolina that everything else was unclear. Now he's back for over a week and it's like he was always here.

When our neighborhood as we knew it was just the walk from our apartment to Pike's Soda Shop, and the smell of fried dough in the air from the Honey Bun factory down the street. Rob would take the light rail into Uptown and I'd walk to the station with him before going back home to unpack boxes and write and drink coffee and talk to my mom on the phone. I had nowhere to be so I would often pack a bag and hop on the train later in the afternoon for a latte at 7th Street Public Market, and I'd sit and write and Rob would walk down from his office and meet me for lunch.

And then there are the newer memories that feel so much like home: the cute house we will have to leave, the smell of fresh-cut grass every Monday morning after the landscapers come, our big open kitchen where we've entertained so many of our friends, Ender snoozing in the sun on our back patio. I finally have an office here but didn't unpack it until last week because I didn't want to get too used to it.

There are rowing workouts early every Tuesday and Thursday morning followed by an iced latte or an almond milk cappuccino with my friend Kristen--we sit outside and feel the cool morning air on our sweaty shoulders and once again I'm back to that almost-autumn magic state of mind, where anything is possible--even another autumn spent making a home in a new city.

Some Things You May Not Know About Me v.5

It can take me half a day to finish a cup of coffee, especially an iced one. 

I used to be absolutely terrified to stay in the apartment or house alone, but now that I've been doing it for two months I don't mind it and sometimes actually like it.

I can eat almost anything for breakfast--it doesn't have to be breakfast-y. I regularly eat soup for breakfast and sometimes I'll even have a salad.

I don't really like wearing shorts that much. Or skirts--they have to be pretty perfect, which for me means it has a high waist (both) and is long enough (skirts). I'm excited that jean season is upon us!

Ender and I regularly share snacks--an apple, cucumber slices, a banana. I don't know why I love it so much but he is so cute sitting on the couch next to me waiting politely for a piece of whatever fruit or veggie I'm eating.

I go back and forth between wanting to travel the world and feeling content to stay in one place. I guess I'm equal parts adventurous and boring/scared.

Recipe: Paleo Tuna Veggie Bowls

I have a pretty strict no-cooking-when-it's-over-90-degrees rule, so this summer I've been eating a lot of quick and easy salads that come together in a pinch. The problem with salads, as I'm sure you know, is that they can get really boring. This one is different--I put just a little lettuce in a bowl and then load it with sliced radishes, julienned cucumbers, sugar snap peas, cucumber noodles, and any other fresh veggies I might have in my fridge before topping the whole thing with a can of tuna. 

You could serve this salad with my Paleo sesame vinaigrette, but I also like it with just a drizzle of sesame oil and a teaspoon of Thai chili garlic paste--pretty much the same ingredients without taking the extra minute or two to mix them together first.

And I always use Bumble Bee Solid White Albacore in Water--Bumble Bee offers responsibly wild caught Albacore that is delicious, versatile, high in protein, and absolutely perfect as the main ingredient in any meal--see their website for full nutritional facts.

Ingredients: 

  • 1 5-ounce can of Bumble Bee Solid White Albacore Tuna
  • 1 cup of lettuce, chopped
  • 1-2 radishes, sliced thinly
  • 1/2 of a large cucumber, spiralized or julienned
  • 1 medium carrot, julienned
  • 5-6 sugar snap peas, sliced
  • 1-2 teaspoons chopped fresh cilantro
  • 1-2 slices or wedges of fresh lime
  • 1/4 of an avocado, sliced
  • A drizzle of sesame oil
  • 1 teaspoon (more or less depending on heat preference) of Thai chil garlici paste
  • Sesame seeds, for garnish
  • Salt and pepper, to taste

Instructions: 

  1. In a bowl, layer veggies over lettuce and top with drained tuna.
  2. Season with salt and pepper, then dress the salad with a little sesame oil.
  3. Serve with a small spoonful of Thai chili garlic paste and top with avocado, cilantro, and sesame seeds. Serve with fresh lime wedges.
