At the Edge of the Pandemic
Five Months Ago | Freckled Italian

February feels like almost a lifetime ago.

I stood on the shore of Baker Beach on Friday, February 21st, Golden Gate Bridge in the distance, feeling the frozen water on my feet, the bay breeze whipping through my hair. Sophie and Rob sprinted ahead of me while I looked beyond them at my friend Andy, who was visiting us in California for the first time.

He had arrived late on a Wednesday and I picked him up at the airport and stopped, as you do, at In N Out for late night Double Doubles. I was teaching five classes a week at Pure Barre so I got my Thursday morning covered and Rob dropped Sophie off at school (a routine that all three of us were enjoying, but especially Sophie) and Andy and I lazily drank lattes on my couch as Ender excitedly slobbered all over him. Around lunchtime we picked Sophie up at school and ordered too many dumplings before heading back to put her down for a nap and drink afternoon Negronis in our backyard, under the gazebo. Rob came home from the office early and we ordered pizza.

It was the perfect slow down from what had been a busy start to the year, and the weather was perfect—exactly what I had hoped for my friend who was escaping Baltimore in February for a sunny long weekend in California.

Ahead of us was a year of work and travel that we had been planning for and looking forward to for months: weddings in Sonoma and Ohio, a big family trip to Lake Tahoe, a small family getaway to Hawaii, and then the countless days and weekends with no real plans in a place that was finally starting to feel like home.

We headed back to the Mission for coffee and to walk around, finally hugging Andy goodbye as we left him on the sidewalk with another friend who lived in the city. His visit to California was overlapping a trip to New York we had planned, so we headed home to pack and eat leftovers and drop the dog off at the kennel.

We flew to New York the following day with plans to spend two weeks on the east coast, leaving New York over the weekend to visit two sets of friends in the Boston area, and then dropping Rob back in the city for work as Sophie and I headed down to Virginia to connect with family and friends for a few days. I had no idea it would be the last time I would see anyone for almost half a year.

We hugged friends and shared food and touched doorknobs without immediately washing our hands. Sophie scaled several playgrounds in Central Park, launching possibly virus-covered balls as high as possible overhead. At the Math Museum she picked up unsanitized blocks and magnets. When she woke up with a high fever on our second day in the city, I didn’t even think twice about it, I just bundled up and walked to the CVS on the corner for a thermometer, some Advil, and an apple juice. We spent the day together in bed, watching Little Baby Bum, drinking juice (her) and coffee (me), ordering room service, and reading (me) and napping (her).

It wasn’t really until halfway through the trip that we started to hear and read uncertain murmurs about the novel coronavirus making its way to the United States. At my friend Jenna’s house, I remember saying “I think I’d just feel better if I had some hand sanitizer,” as though that one small thing was the solution to a soon-to-be pandemic. She handed me a green travel-size bottle, and I really did feel better.

I have endured this pandemic with very little loss and still it has changed my life, maybe forever. Looking back, it’s bizarre to know that we were just teetering there, on the precipice of something truly monumental.

But we can only go forward from here.

What I've Been Reading/Watching/Loving Lately
What I've Been Reading/Watching/Loving Lately | Freckled Italian

As we approach our fifth month of social distancing and more or less still sheltering in place, I thought it’d be fun to share a few things I’ve been enjoying lately. One perk of having so much extra time at home has definitely been reading again. I’d love to know what’s on your Reading/Watching/Loving Lately list, too—especially if there’s a show or movie you recommend! I truly cannot watch How I Met Your Mother again.

Reading:

How to Talk so Kids Will Listen: This book is really old school in a lot of ways (the examples and questions from clients make me cringe a little bit), but the advice is really solid and I love it. Basically, listen to your kids, validate their feelings, and treat them like people. A lot of the issues are a little older than toddler years (there is a How to Talk to (Little) Kids Will Listen that I have skimmed through and might read again), but I am learning a lot that can be applied to my parenting right now.

Eyes to the Wind: A Memoir of Love and Death, Hope and Resistance: This is Ady Barkan’s memoir and I’m really taking my time with it. I love hearing from him on Twitter and whenever he is a guest on Pod Save America, so I was excited to get his book. He is truly an inspiration.

I’m Still Here: Black Dignity in a World Made for Whiteness: I just ordered this one and can’t wait for it to get here. Reading and learning from Black writers is something that I have not been good about, and I want to make space for that.

Watching:

Barry: After months of re-watching familiar shows because we didn’t want to commit to anything new, Rob and I are really enjoying this, which is different than most of the things we usually choose. I love Bill Hader and we’re only five or six episodes in but I really like it so far.

Loving:

  • Sourdough toast with avocado, lemon, and Everything But the Bagel Seasoning (still!)

  • These CBD bath salts, which might almost turn me into a Bath Person

  • How much Sophie talks these days (the other day at breakfast she asked Rob “How are you feeling today dada?”)

  • This new vacuum that has turned me into someone who vacuums my kitchen counter

  • Waking up really early and walking Ender 3 miles before anyone wakes up

A few other things I’ve been up to: actually folding laundry when it comes out of the dryer, daydreaming about spending autumn on the East Coast, grocery shopping as rarely as possible, selling random things in our garage on Facebook Marketplace, and getting more excited than I ever thought I would about cute face masks.

The World's Best Rice Krispy Treats
The+World%27s+Best+Rice+Krispy+Treats+%7C+Freckled+Italian

Rice Krispy Treats are kind of a Thing in my family—there’s even a not-so-secret recipe that Rob grew up with that we have been making pretty frequently these days. They’re such a classic treat that I can never resist them, but I realized the other day that my ideal Rice Krispy Treat is so marshmallow-y that it almost falls apart when you pick it up. I made a new batch the other day to test it out and my goodness was it perfect. The plus side is that it’s so gooey and pull-y that they’re almost a choking hazard, so you can feel good about eating all of them while your toddler is napping.

The recipe on the marshmallow bag calls for 6 cups of Rice Krispies cereal, but I like to cut that in half. The great thing about Rice Krispy Treats is that you can customize the recipe pretty much any way you want to (my friend Jamie once threw crumbled Oreos in at the coffee shop where we worked and it was a huge hit). Add more cereal, or less, or a drizzle of chocolate or caramel, top with sprinkles, even brown the butter first!

Ingredients:

  • 3 tablespoons of butter

  • 1 package of mini marshmallows (about 10 ounces)

  • 3 cups of Rice Krispies cereal

Instructions:

  1. In a large pot, melt butter over medium-low heat. Add marshmallows and stir frequently until melted completely.

  2. Remove from heat and add the cereal. Gently stir to combine the marshmallow and Rice Krispies but work quickly while it’s still warm.

  3. Pour the mixture into a greased baking pan—the size is up to you depending on how thick or thin you like your bars. Add any toppings and allow to cool.

Rob likes his cold but I prefer them room temperature for maximum gooeyness. It’s your dessert, you do you!
