Recipe: Grilled Peaches with Goat Cheese & Honey

I love peaches in the summer, and I love grilling, so to me, a grilled peach is pretty much the epitome of the season. For this little recipe, I used a grill pan instead of the outdoor grill, which tends to be easier if you're just making a quick batch. Topped with goat cheese and a drizzle of honey, these make a perfect appetizer or even a unique dessert. 

Ingredients:

  • Two to three large, ripe peaches
  • PAM cooking spray (I used the olive oil one)
  • Several tablespoons of soft goat cheese
  • A couple tablespoons of honey
  • Mint, as a garnish

Instructions:

  1. Heat grill pan on stove, turned to medium-high heat.
  2. Wash the peaches and cut each one in half. Remove pits.
  3. Spray pan with PAM and place peaches cut side down on grill pan. Cook for about five minutes, then flip them over and cook for another two or three.
  4. Plate the peaches and crumble goat cheese over each one. Drizzle with honey, garnish with fresh mint, and serve warm.

From Home to Home to Home

I'm headed back to Charlotte from Roanoke today, before my flight to Minneapolis tomorrow. After this past week, it seriously feels like Rob and I are living in three places. It's been really nice hanging around my parents' house, going to CrossFit, having lunch out with my mom and our nextdoor neighbors, taking long walks, and meeting some friends for dinner at my favorite restaurant downtown (I went twice in two days, woops).

This trip really made me anxious to get to Charlotte full-time and start making a home there. I can't believe we're only two or three weeks away from the big move! It's going to be so good, even if there's still a lot of packing left to do.

Weekend in Photos // Exploring Charlotte

Happy Monday! I spent the past five days hanging out in Charlotte with Rob and some old friends that live in town. It's been so fun checking out coffee shops, farmers markets, parks, and lunch spots. I have a huge list of restaurants to visit once we've moved officially, and I can't wait to get started.

Now I'm spending a few days in Roanoke before heading back to Minneapolis for the weekend, so I'll be home until Wednesday afternoon. For now, here are a few shots from my time spent so far in North Carolina.
