I've been a big fan of fresh spring rolls for years but haven't thought to make them myself until recently. I gave it a try on Monday and they were so delicious and fun that I have made them every day since. A couple of my girlfriends came over for a wine night yesterday, so I whipped up another plate full and they were a hit--I ran out of shrimp about halfway through so I added some avocado and made straight-up veggie ones which were just as delicious.
