Weekend in Photos // Last Weekend in Minneapolis

Rob got in on Thursday night as usual and we spent a lot of time packing and seeing friends all weekend. Part of me wanted to make the most of every minute of every day, and while I think we did a decent job, a bigger part of me was just overwhelmed with the thought of making everything sentimental in some way. I almost forgot that the past year here has been fantastic whether we make it to that place in St. Paul, say goodbye to our favorite bartender, and have one more brunch at Modern Times or not.

We move to North Carolina on Friday, so I'll be here all week, packing up the last of our stuff and doing a whole lot of reminiscing.

Happy Friday! I can't believe that this is our last weekend in Minneapolis. Rob got in last night and will be working from home today. This weekend we're seeing some friends, packing some boxes, and just making the most of this fantastic city. This time next week we'll be moving out and hitting the road to North Carolina! The time has just flown by.

  • It may be a bit much, but this swimsuit is magical and would make me feel like a mermaid. What do you guys think? (And it's 70% off?! I might actually end up buying it this weekend.)

  • I'm not usually a big fan of a pointy toe on my heels, but these are just too pretty.

Recipe: Paleo Fish Tacos

I made some bright and summery mango salsa with pineapple and avocado the other day, and it was delicious with a few grilled tuna steaks for dinner. I had leftovers the next day, so I made Paleo fish tacos for lunch! Sometimes eating leftovers can be a drag, but if you switch it up a little, you might not even notice.

Ingredients:

  • Grilled fish--if you don't have or want tuna, you could do red snapper or tilapia
  • Several leaves of Bibb lettuce
  • A few tablespoons (or more!) of mango salsa (get my recipe for that here)
  • One or two lime wedges

Instructions:

  1. Cook fish on grill (if you're using leftovers like I did, just microwave it to reheat)
  2. Assemble taco using lettuce as the taco shell. Add fish and top with salsa. (I like to separate the fish into smaller pieces with a fork or a knife instead of eating the whole thing in one piece.)
  3. Give the whole thing a squeeze of lime, fold over, and enjoy!
