As you may know, I'm a huge fan of the grilled cheese sandwich. We're like best friends.
When I was little, I'd always ask for the "girl cheese." My brother caught on and I'll never forget the tantrum he threw when he asked for a "boy cheese" sandwich and the waitress didn't know what he meant, so my mom sort of whispered to her, "He just wants the grilled cheese sandwich." Sean was only three or four and he got so frustrated, trying to explain to everyone that he didn't want a girl cheese, but a boy cheese for lunch.
So anyway. This is how you make a fancier one. For grown ups. A grown-up cheese.
You add things to it.
You can add bacon or ham, of course, but I didn't have any on hand. Let me show you what I used.
I also used sliced ciabatta instead of a regular sandwich loaf, mostly because it was all I had but also because it makes the sandwiches look like big crackers, and then you can have several of them. This is what else you'll need (get ready):
Bread
Cheese
Get a flat skillet or large pan pretty hot over medium heat. Spray some PAM or brush some butter on your bread (I think PAM is amazing when you're trying to get bread to act all brown and toasty). Get both sides of the bread hot and crunchy, then add a slice of cheese to each one. Let it melt. Add your toppings. Season with salt + pepper.
Eat the sandwich open-faced or put two grilled cheese pieces together. Or both.
Can be enjoyed by girls, boys, and grownups.

Um, I am just as obsessed with grilled cheese! there is a food truck that comes around weekly called "The Big Cheese Truck" and I get it every time. and i LOVE putting avocados on my cheesy goodness. man, now I want some.

Pop's is the only place I miss in Roanoke. You can NEVER go wrong with tomato soup and grilled cheese on a cold day!
